Summer Vegetable Salad with Olives
Prep Time: 20-25 min.
Ingredients:
- 1 cup mixture of green and black olives
- 1/4 cup olive oil
- 1 clove fresh garlic (peeled and forced through a press) or (1/4 cup of pickled garlic)
- 1/8 teaspoon salt
- freshly ground black pepper to taste
- 3 tomatoes cut into wedges
- 1 medium sweet onion, sliced into 1/4-inch thick rings
- 1 cucumber, sliced into 1/4-inch thick rounds
- 6 fresh basil leaves sliced into 1/8-inch ribbons
Preparation:
Place all ingredients: tomatoes, onion, cucumber, olives and basil in a bowl. Add olive oil, salt and pepper and mix it up. Make it cooler in the fridge for 10-15minutes before serving.
It is lovely with garlic bread or toasts.

Delicious walnut cake
Prep Time: 1 hour 15 min.
Ingredients
- ½ cup butter
- 1¾ cups flour
- 1 cup sugar
- 2¾ teaspoons baking powder
- Yolks of 3 eggs
- Whites of 2 eggs
- ½ cup milk
- ¾ cup walnut meat, broken in pieces
- ½ teaspoon salt
Preparation:
- Preheat oven to 220.
- Mix ingredients in order given.
- Pour in a buttered pan.
- Bake 45 minutes. Let cool.
- Garnish with pieces of walnuts
